Make cupcakes!

I’ve been in a very lemony mood the last number of months. I’ve been nearly drinking my weight in lemon water every day and we always have a ton of lemons in the fridge. So, when Bethany posted YET ANOTHER MOUTH-WATERING RECIPE that happened to be lemon cupcakes, I had to make them. I couldn’t make it exactly to recipe, as I had margarine instead of butter and all-purpose flour instead of cake flour. Then I didn’t have any cupcake liners so I had to use the mini ones and I wasn’t in a jam mood so I didn’t do the filling, which was probably good, because I don’t think the filling would have fit in those mini cups.

But, they still turned out delicious. Even if I am horrid at icing them. Thanks Bethany!

ps. Do you have any idea how much of a work out it is to grate lemon zest? No? Just me?

  1. Jen, I know! It is a lot of work. It’s easier with a microplane though, which I only got a year or so ago and now I wonder why I waited so long to invest in one. And it wasn’t even a big investment, only a few bucks.

    I’m glad they tasted good, anyway! (And I don’t usually do the jam filling either, just the cream cheese filling.)
